A stunning and easy 4th of July dessert featuring a sugar cookie crust, tangy cream cheese layer, and fresh berries arranged like a flag. Perfect for celebrations without the stress.

  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk or heavy cream
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1/2 cup fresh raspberries (optional)
  • 1 tablespoon apricot jam mixed with 1 teaspoon water (optional, for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-inch pizza pan or baking sheet with parchment paper.
  2. In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Add egg and vanilla extract; beat until combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to wet mixture, mixing on low until just combined. Dough will be soft and slightly sticky.
  4. Transfer dough to prepared pan. Press into an even 12-inch circle or rectangle about 1/4-inch thick. Lightly dust hands with flour if sticky.
  5. Bake for 12-15 minutes, until edges are lightly golden and center is set but pale. Cool on pan for 10 minutes, then transfer to a wire rack to cool completely (about 30 minutes).
  6. While crust cools, beat softened cream cheese until smooth. Add powdered sugar, vanilla extract, and milk; beat until light and fluffy.
  7. Spread cream cheese mixture evenly over cooled crust, leaving a small border if desired.
  8. Arrange blueberries in a cluster in the upper left corner for a blue field. Use sliced strawberries to create red stripes, leaving white cream cheese stripes between them. Press fruit gently into cream cheese.
  9. Refrigerate assembled pizza for at least 30 minutes before slicing. Use a sharp knife or pizza cutter to slice into wedges or squares, wiping blade clean between cuts.

Notes

For best results, ensure butter and cream cheese are truly softened. Cool crust completely before adding cream cheese to prevent melting. Pat fruit dry to avoid bleeding. Crust can be baked up to 2 days ahead; cream cheese layer can be made a day ahead. Assemble day of serving.
