Ingredients

Scale
  • 4 ounces prosciutto, thinly sliced
  • 4 ounces genoa salami, sliced into thin ribbons or small rounds
  • 4 ounces soppressata, diced into small cubes
  • 4 ounces brie, cut into small wedges
  • 4 ounces sharp cheddar, cut into small cubes
  • 4 ounces gouda, cut into small cubes
  • 2 ounces blue cheese, crumbled
  • 1 cup red seedless grapes, washed and dried
  • 1/2 cup dried apricots, halved
  • 1/2 cup dried figs, quartered
  • 1/2 cup cornichons or small pickles
  • 1/4 cup kalamata olives, pitted
  • 1 cup assorted crackers
  • 1/2 cup roasted and salted almonds
  • 1/4 cup honey, for drizzling
  • Fresh rosemary sprigs, for garnish

Instructions

  1. Prep Your Ingredients (10 minutes): Wash and thoroughly dry grapes. Cut brie, cheddar, and gouda into even, bite-sized cubes (about 1/2-inch). Crumble blue cheese. Slice salami into thin ribbons by stacking a few slices and cutting them into strips. Halve dried apricots and quarter figs. Set everything out in small bowls.
  2. Start with the Base (2 minutes per cup): Add a small handful of almonds to the bottom of each cup. Place a few cubes of cheddar and gouda on top of the almonds.
  3. Add the Meats (3 minutes per cup): Fold a slice of prosciutto into a loose ribbon or small rose and place it against the side of the cup. Do the same with salami ribbons. Add a few cubes of soppressata in the center.
  4. Layer in the Fruits and Pickles (2 minutes per cup): Tuck grapes, dried apricots, and figs around the meats. Add a couple of cornichons and a few kalamata olives.
  5. Top with Soft Cheese and Crackers (2 minutes per cup): Place a wedge or two of brie on top, along with a sprinkle of blue cheese. Carefully arrange 3-4 crackers on the very top, leaning them against the rim. Drizzle a tiny bit of honey over the brie and crackers.
  6. Garnish and Chill (5 minutes): Finish each cup with a small sprig of fresh rosemary. Place cups on a large tray and refrigerate for at least 30 minutes before serving.

Notes

Do not overfill the cups; leave a little breathing room at the top. Keep your knife sharp for clean cuts. Dry grapes thoroughly to prevent soggy crackers. Assemble in batches of 4 cups for focus. These cups can be made a day ahead; add fresh rosemary garnish just before serving.
