  • 1/4 cup sunflower butter (e.g., SunButter brand)
  • 1/3 cup crunchy granola (with nuts and seeds, avoid overly sweet varieties)
  • 1 tablespoon freshly squeezed lemon juice
  • Optional: sprinkle of cinnamon or drizzle of honey

Instructions

  1. Wash and slice 2 medium apples into 8 thin wedges each (about 1/4 inch thick).
  2. Place apple slices in a small mixing bowl and toss with 1 tablespoon lemon juice to prevent browning. Let sit for 2 minutes.
  3. Spread about 1 tablespoon of sunflower butter evenly over each apple slice. Warm sunflower butter slightly if too thick.
  4. Sprinkle approximately 1 tablespoon of crunchy granola over the sunflower butter on each slice. Optionally add cinnamon or honey.
  5. Arrange the prepared apple slices on a serving plate and serve immediately or refrigerate up to 2 hours. Let sit 5 minutes at room temperature before serving if refrigerated.

Notes

Warm sunflower butter slightly if too thick for easier spreading. Add granola just before serving to avoid sogginess. Toss apple slices in lemon juice immediately after slicing to prevent browning. For a warm snack, lightly grill apple slices before assembly.
