  • 2 tablespoons instant espresso powder
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chopped dark chocolate or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch (20x20cm) baking pan with parchment paper, leaving an overhang on two sides.
  2. In a mixing bowl, combine melted butter and granulated sugar. Whisk until smooth and glossy, about 1-2 minutes.
  3. Add eggs one at a time, whisking after each addition. Stir in vanilla extract until batter is shiny and thick.
  4. Sift together flour, cocoa powder, instant espresso powder, and salt. Gradually fold dry ingredients into wet mixture until no dry streaks remain. Fold in chocolate chips if using.
  5. Pour batter into prepared pan and spread evenly. Tap pan gently to release air bubbles.
  6. Bake for 22-26 minutes, checking at 22 minutes with a toothpick. Brownies are done when toothpick has a few moist crumbs attached and edges look set and slightly crackly.
  7. Cool completely in pan on a wire rack before slicing.
