A quick and easy Halloween appetizer featuring layers of seasoned ground beef, refried beans, salsa, and cheese, topped with a sour cream spiderweb design and olive spiders. Perfect for last-minute parties or spooky movie nights.

  • 1 pound ground beef (80/20 works best)
  • 1 packet taco seasoning (e.g., McCormick)
  • 1 can (16 oz) refried beans (smooth consistency)
  • 1 cup sour cream (full-fat)
  • 1 cup salsa (medium heat)
  • 2 cups shredded Mexican blend cheese (or cheddar)
  • 1/2 cup black olives, sliced
  • 1/4 cup green onions, chopped (optional)
  • 1 bag tortilla chips (sturdy scoops)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat for 6-8 minutes, breaking it up with a spatula. Drain excess fat.
  2. Reduce heat to low and stir in taco seasoning packet with 1/4 cup water. Simmer for 2-3 minutes until thickened.
  3. Spread refried beans evenly across the bottom of a 9-inch pie dish or round baking dish.
  4. Spoon the seasoned beef over the refried beans and spread evenly.
  5. Pour salsa over the beef layer and spread gently.
  6. Sprinkle shredded cheese over the entire dish.
  7. Microwave for 2-3 minutes until cheese is melted and bubbly, or bake at 350°F for 10 minutes.
  8. Fill a piping bag or zip-top bag with sour cream and snip a tiny corner. Pipe a small circle in the center, then concentric circles outward about 1 inch apart. Use a toothpick to drag from center outward through all circles, then from outside inward between each line to create a web pattern.
  9. Place sliced black olives around the edge of the dip to resemble spiders.
  10. Sprinkle chopped green onions over the top. Serve immediately with tortilla chips.

Notes

Use full-fat sour cream for the spiderweb design; low-fat is too runny. Let sour cream sit at room temperature for 10 minutes before piping for easier handling. Practice the web pattern on a plate first if nervous. Assemble dip (minus sour cream web) up to 24 hours ahead; add web just before serving. Leftovers keep in the refrigerator for up to 3 days.
