A warm, oozy wheel of brie wrapped in flaky puff pastry with a sweet fig jam spider web design. This easy Halloween appetizer is perfect for parties and guaranteed to impress.

Ingredients

Scale
  • 1 wheel of brie cheese (8 oz / 225 g)
  • 1/3 cup fig jam (about 100 g)
  • 1 sheet puff pastry (about 250 g)
  • 1 large egg
  • 1 tablespoon water
  • Optional: fresh rosemary or thyme for garnish
  • Optional: black sesame seeds or poppy seeds for sprinkling
  • Optional: flaky sea salt for finishing

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Take the cold brie wheel and carefully cut off the top rind (about 1/4 inch thick) to expose the creamy interior, leaving the sides intact.
  3. On a lightly floured surface, gently roll the thawed puff pastry sheet into a 12-inch square.
  4. Place the brie, cut side up, in the center of the pastry. Spoon about 2 tablespoons of fig jam onto the exposed brie and spread evenly.
  5. Fold the corners of the puff pastry up and over the brie, pinching the seams to seal completely. Flip the wrapped brie over so the seam is on the bottom and place on the prepared baking sheet.
  6. Spoon the remaining fig jam into a small piping bag or zip-top bag with a tiny corner snipped off. Pipe concentric circles of jam on top of the wrapped brie, then drag lines from the center outward with a toothpick to create a spider web pattern.
  7. In a small bowl, whisk together the egg and water. Brush the egg wash over the entire pastry surface, being careful not to smudge the spider web. Sprinkle with black sesame seeds or poppy seeds if desired.
  8. Bake for 20-25 minutes, until the pastry is puffed and golden brown and the brie is soft and melted.
  9. Let the baked brie rest on the baking sheet for 5-10 minutes before transferring to a serving platter. Garnish with fresh herbs if desired and serve warm with crackers, sliced baguette, or apple slices.

Notes

Keep everything cold for best puff pastry results. Don’t overfill with jam. Let the baked brie rest for 5-10 minutes before serving to prevent the cheese from running out. You can assemble the dish up to 24 hours in advance and bake just before serving.
