  • ½ cup plain full-fat Greek yogurt (120g), can substitute sour cream
  • 2 tablespoons mayonnaise
  • 1 teaspoon fresh squeezed lemon juice
  • 1 small garlic clove, minced

Instructions

  1. Rinse and pat dry 2 pounds (900g) of chicken wings, separating flats and drumettes if needed. Dry wings crisp better on the grill. Set aside.
  2. In a large bowl, combine 2 teaspoons chipotle powder, 3 tablespoons honey, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, 1 teaspoon salt, ½ teaspoon black pepper, and 2 tablespoons olive oil. Stir until well mixed. If honey is thick, warm slightly in microwave for 10 seconds to help blend.
  3. Toss the wings thoroughly in the marinade until evenly coated. Cover and refrigerate for at least 30 minutes, ideally up to 2 hours for deeper flavor. Do not marinate longer than 2 hours to avoid mushy texture.
  4. Prepare the grill to medium-high heat (about 375°F/190°C). Oil the grate lightly to prevent sticking. For charcoal, let coals burn until covered with white ash.
  5. Place wings on the grill spaced out. Cook about 10 minutes per side, flipping once. Watch for flare-ups due to honey glaze. Wings should be golden-brown with some charred spots and glossy from the glaze.
  6. In the last 5 minutes, brush a little extra honey directly onto the wings for a sticky finish. Move wings to a cooler part of the grill if flare-ups get too intense.
  7. Check doneness when internal temperature reaches 165°F (74°C) or juices run clear. Remove wings and let rest for 5 minutes to redistribute juices.
  8. While wings grill, mix ½ cup crumbled blue cheese, ½ cup Greek yogurt, 2 tablespoons mayonnaise, 1 teaspoon lemon juice, and 1 minced garlic clove. Season with salt and pepper. Chill dip for at least 15 minutes to meld flavors.
  9. Arrange wings on a serving platter with a bowl of blue cheese dip. Optionally add celery sticks or carrot slices. Serve and enjoy.
