  • Cinnamon sugar coating:
  • ½ cup (100 g) granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats for easy cleanup.
  2. In a large bowl, whisk together 2 ½ cups (315 g) all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, and ½ teaspoon salt. Set aside.
  3. Using a stand or hand mixer, beat 1 cup (227 g) softened unsalted butter with 1 cup (200 g) granulated sugar and ½ cup (110 g) packed light brown sugar until light and fluffy, about 3-4 minutes on medium speed.
  4. Beat in 2 large room-temperature eggs one at a time, then stir in 2 teaspoons vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed just until combined. Do not overmix.
  6. Using a spatula, gently fold in ¾ cup rainbow sprinkles, being careful not to overwork the batter.
  7. In a small bowl, mix ½ cup granulated sugar with 2 teaspoons ground cinnamon to prepare the cinnamon sugar coating.
  8. Scoop dough by heaping tablespoonfuls (about 1.5 tablespoons or 22 g each). Roll each ball in the cinnamon sugar mixture to coat evenly, then place on the prepared baking sheets about 2 inches apart.
  9. Bake for 10-12 minutes until edges look set but centers are still soft. Do not wait for golden brown to maintain chewy softness.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
