A smooth, savory pureed BBQ recipe designed for seniors with swallowing difficulties, delivering rich smoky flavors in a gentle, easy-to-swallow texture.

Ingredients

Scale
  • 1 cup cooked chicken breast, shredded (or cooked pork for richer flavor)
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup BBQ sauce (mild and smooth, e.g., Stubbs Original or Sweet Baby Ray’s)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon olive oil
  • Extra chicken broth or water (to thin puree as needed)
  • Optional: 1 teaspoon honey or maple syrup (for a touch of sweetness)

Instructions

  1. Prepare your chicken: shred leftover cooked chicken finely or poach fresh chicken breast in simmering water or broth for about 15 minutes until tender, then shred.
  2. Combine shredded chicken, 1/2 cup chicken broth, BBQ sauce, apple cider vinegar, smoked paprika, garlic powder, and olive oil in a medium saucepan. Stir gently to mix.
  3. Warm the mixture over low to medium heat for 5-7 minutes, stirring occasionally. Do not let it boil or scorch.
  4. Transfer the warm mixture to a blender or food processor and blend on high until completely smooth and creamy, about 1-2 minutes. Scrape down sides as needed. Add extra chicken broth a tablespoon at a time if too thick.
  5. Taste and adjust seasoning if needed by adding a little honey or more vinegar. Pour into a serving dish and serve warm at about 100Β°F (38Β°C).

Notes

Avoid overcooking chicken to prevent dryness. Blend thoroughly for smooth texture. Use low heat to warm mixture to avoid burning. Adjust thickness with broth or water. Serve warm but not hot to protect sensitive mouths. Optional straining for extra smoothness.
