Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prep the apples: Peel, core, and slice apples into ¼-inch thick pieces. Toss in a medium bowl with granulated sugar, 1 tablespoon flour, ½ teaspoon cinnamon, lemon juice, and a pinch of salt. Let sit while making topping.
  3. Make the crisp topping: In a small bowl, combine oats, ¼ cup flour, brown sugar, ¼ teaspoon cinnamon, and a pinch of salt. Add cold butter cubes. Use a pastry cutter, fork, or fingertips to work butter into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces.
  4. Assemble the crisp: Pour apple mixture into a small baking dish (about 5×7 inches or two 8-ounce ramekins). Spread evenly. Sprinkle topping over apples, covering completely. Do not press down.
  5. Bake: Place dish on a baking sheet. Bake for 20-25 minutes until topping is golden brown and apples are bubbling around the edges. If topping browns too quickly, tent loosely with foil for last 5 minutes.
  6. Cool and serve: Let crisp cool on a wire rack for at least 5 minutes before serving. Serve warm.
