  • 1 pound (450g) ground beef (80/20 blend)
  • 4 ounces (115g) blue cheese, crumbled
  • 6 slices thick-cut bacon
  • Salt and freshly cracked black pepper, to taste
  • 4 soft burger buns (brioche recommended)
  • 1 tablespoon butter, softened
  • Optional toppings: lettuce, tomato slices, pickles, caramelized onions

Instructions

  1. Place the 6 bacon slices in a cold skillet over medium heat. Cook until crispy but still slightly chewy, about 8-10 minutes, flipping occasionally. Transfer to paper towels to drain.
  2. In a mixing bowl, gently season 1 pound (450g) of ground beef with salt and pepper. Divide into 8 equal portions and gently roll into balls. Avoid overworking the meat.
  3. Take one beef ball and flatten slightly in your palm. Place about 1 tablespoon of crumbled blue cheese in the center. Top with another beef ball and carefully seal the edges, forming a stuffed ball. Repeat for all portions.
  4. Preheat your cast iron skillet or griddle over medium-high heat until very hot, about 3-4 minutes.
  5. Place two stuffed beef balls on the skillet at a time, leaving space between them. Using a heavy spatula or burger press, press each ball firmly down to about Β½-inch (1.25 cm) thickness. Hold for 20 seconds to form a crust.
  6. Let the patties cook undisturbed for 2-3 minutes or until the edges are deeply browned and crispy. Flip carefully using a spatula. Cook the other side for 1-2 minutes. Avoid pressing down after flipping.
  7. While the burgers cook, spread softened butter on the buns and toast them face down in a clean skillet or on the griddle until golden, about 1-2 minutes.
  8. Place the cooked patties on the bottom buns, top with crispy bacon slices and any optional toppings, then crown with the top bun.
  9. Serve immediately while hot and the blue cheese is melty.

Notes

Chill the beef balls for 10 minutes before smashing to prevent shrinking. Seal the edges of the patties well to avoid cheese leakage. Cook bacon slowly over medium heat for best texture. Toast buns just before assembling to keep them warm and crisp.
