Savory Bacon-Wrapped Dates Recipe with Creamy Goat Cheese and Honey Drizzle

A quick and easy appetizer featuring sweet Medjool dates stuffed with creamy goat cheese, wrapped in crispy bacon, and finished with a honey drizzle. Perfect for last-minute gatherings and crowd-pleasing parties.

  • 20 large Medjool dates, pitted
  • 4 oz (115 g) goat cheese, softened
  • 10 slices bacon, cut in half
  • 2 tablespoons honey, for drizzling
  • Toothpicks, for securing bacon (optional)
  • Optional garnishes: fresh thyme or crushed pistachios

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make a lengthwise slit in each date to remove the pit if not already pitted, being careful not to split the dates.
  3. Fill each date with about 1 teaspoon (5 g) of softened goat cheese.
  4. Wrap each stuffed date with half a slice of bacon, securing with a toothpick if needed.
  5. Place the bacon-wrapped dates seam side down on the prepared baking sheet, spacing them evenly.
  6. Bake for 20-25 minutes, turning halfway through, until bacon is golden and crispy and cheese is warm.
  7. Remove from oven and drizzle 2 tablespoons of honey evenly over the warm dates.
  8. Optionally, sprinkle with fresh thyme leaves or crushed pistachios before serving.

Notes

If bacon curls too much during baking, secure tightly with toothpicks or partially cook bacon for 2-3 minutes before wrapping. Warm honey slightly before drizzling for even coating. Avoid overstuffing dates with goat cheese to prevent oozing during baking. Leftovers can be refrigerated up to 3 days and reheated gently in the oven.
