Refreshing Spiked Watermelon Slushie with Lime and Tequila

A quick and easy summer cocktail blending sweet watermelon, fresh lime juice, and tequila into a perfectly icy slushie with a refreshing kick.

Ingredients

  • 4 cups seedless watermelon, cubed (about 600 grams)
  • Juice of 2 medium limes (about 2 tablespoons or 30 ml)
  • 4 ounces (120 ml) tequila blanco
  • 2 tablespoons simple syrup (optional)
  • 2 cups ice cubes (about 480 ml)
  • Fresh mint leaves, a small handful (optional, for garnish)
  • Pinch of sea salt (optional)

Instructions

  1. Cut the watermelon into chunks, removing any seeds if needed. Measure about 4 cups (600 grams). Chill the cubes before blending for an extra cold slushie.
  2. Roll the limes on the counter to loosen juice, then squeeze until you have about 2 tablespoons (30 ml) fresh lime juice. Set aside.
  3. In your blender, add the watermelon cubes and blend on high until smooth, about 30 seconds, until silky and no large chunks remain.
  4. Pour in the lime juice and simple syrup (if using). Blend again briefly to combine, about 10 seconds.
  5. Add 4 ounces (120 ml) of tequila blanco to the blender. Pulse a couple times to mix without over-thinning the slushie.
  6. Add about 1 cup (240 ml) of ice cubes and blend until crushed but still slushy, about 20 seconds. Add up to 1 more cup (240 ml) of ice if you want thicker slush.
  7. Taste your slushie. Add a pinch of sea salt if desired, or a squeeze more lime or syrup if needed. Blend briefly again if you add anything.
  8. Pour into chilled glasses. Garnish with fresh mint leaves and a lime wedge. Serve immediately.

Notes

Use ripe watermelon for best sweetness and texture. Add ice gradually to control slush consistency. Fresh lime juice is preferred over bottled. Chill glasses before serving to keep the slushie colder longer. For non-alcoholic version, replace tequila with sparkling water or lemon-lime soda.
