This quick and easy sheet pan dinner features juicy Italian sausages roasted with sweet bell peppers and onions, all caramelized to perfection in about 30 minutes. It’s a stress-free, crowd-pleasing meal that requires minimal prep and cleanup.

  • 1.5 pounds (680 grams) Italian sausage (sweet or hot)
  • 3 large bell peppers (mixed colors), sliced into 1-inch strips
  • 1 large red onion, cut into 1/2-inch wedges
  • 3 tablespoons (45 ml) olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon kosher salt (or 3/4 teaspoon table salt)
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Position a rack in the middle of the oven.
  2. Wash bell peppers, cut in half, remove stems, seeds, and membranes. Slice into 1-inch strips. Peel and cut red onion into 1/2-inch wedges, separating slightly.
  3. In a large mixing bowl, combine sliced peppers and onions with olive oil, minced garlic, oregano, basil, salt, black pepper, and red pepper flakes (if using). Toss until evenly coated.
  4. Line a rimmed sheet pan (18×13 inch) with parchment paper or foil. Spread seasoned vegetables in a single even layer.
  5. Nestle Italian sausages into the vegetables, spacing evenly. Pierce each sausage once or twice with a fork.
  6. Roast for 15 minutes. Do not open the oven door.
  7. Remove pan from oven. Flip sausages with tongs and stir vegetables. Spread back into an even layer.
  8. Return to oven and roast for another 10-15 minutes, until sausages are browned and reach an internal temperature of 160°F (71°C) for pork or 165°F (74°C) for poultry, and vegetables are tender and caramelized.
  9. Remove from oven and let rest for 5 minutes. Sprinkle with fresh parsley if desired. Serve sausages with peppers and onions spooned over the top.

Notes

For best results, do not overcrowd the pan; use two pans if doubling the recipe. Flipping sausages halfway through ensures even browning. Letting the pan rest after cooking allows juices to redistribute. For extra browning, move pan to bottom rack for last 5 minutes.
