These no-bake cheesecake bites come together in under 15 minutes with simple ingredients like cream cheese, graham crackers, dried cranberries, and orange zest. They’re creamy, tangy, and perfect for holiday parties or a quick weeknight treat.

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs (about 10–12 full sheets, crushed finely)
  • ¼ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • Pinch of salt
  • 16 oz (450g) cream cheese, softened to room temperature
  • ½ cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Zest of 1 medium orange (about 1 tablespoon)
  • 2 tablespoons fresh orange juice
  • ½ cup dried cranberries, roughly chopped
  • ¼ cup dried cranberries, finely chopped (for rolling)
  • Extra orange zest, for garnish
  • Optional: ¼ cup white chocolate chips, melted, for drizzling

Instructions

  1. Make the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and a pinch of salt. Stir with a fork until the mixture looks like wet sand and holds together when you squeeze it. Set aside about 2 tablespoons of this mixture for sprinkling on top later. Press the remaining mixture firmly into the bottom of an 8×8 inch baking dish lined with parchment paper. Pop it in the fridge to set while you make the filling.
  2. Soften the cream cheese: In a large bowl, beat the softened cream cheese with an electric hand mixer on medium speed until it’s smooth and fluffy—about 1 minute. Scrape down the sides of the bowl with a spatula. Make sure there are no lumps. If there are, keep beating for another 30 seconds.
  3. Add the sugar and flavorings: Add the sifted powdered sugar, vanilla extract, orange zest, and fresh orange juice to the cream cheese. Beat on low speed until combined, then increase to medium and beat for another 30 seconds until the mixture is light and creamy. It should look like a thick frosting. Scrape the bowl again.
  4. Fold in the cranberries: Gently fold the chopped dried cranberries into the cream cheese mixture using a spatula. Don’t overmix—you want the cranberries evenly distributed, but you don’t want to break them up too much. The mixture will be thick and slightly sticky.
  5. Assemble the bites: Remove the crust from the fridge. Using a small cookie scoop or a tablespoon, scoop out portions of the cheesecake filling and roll them into 1-inch balls. Place each ball on the prepared crust, spacing them about ½ inch apart. You should get about 20-24 bites. If the mixture is too sticky to roll, wet your hands slightly with cold water.
  6. Add the topping: In a small bowl, combine the reserved graham cracker crumbs with the finely chopped dried cranberries and a little extra orange zest. Gently roll each cheesecake bite in this mixture, pressing lightly so it sticks. Place the coated bites back on the baking sheet. If you’re using the white chocolate drizzle, melt the chocolate chips in a microwave-safe bowl in 15-second intervals, stirring between each, then drizzle over the bites with a fork.
  7. Chill: Refrigerate the bites for at least 1 hour before serving. This step is crucial—it firms them up and lets the flavors meld. If you’re in a hurry, pop them in the freezer for 20 minutes.

Notes

Make sure cream cheese is truly softened to avoid lumps. Sift powdered sugar for smooth texture. Wet hands slightly when rolling sticky filling. Chill crust before adding filling to prevent sogginess. Bites can be made a day ahead; flavors deepen overnight. Store in airtight container in fridge for up to 5 days or freeze for up to 3 months.
