Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper. Let rest at room temperature for about 10 minutes.
  2. Heat a skillet over medium-high heat and add olive oil. Heat until shimmering but not smoking, about 2 minutes.
  3. Place chicken breasts in the pan without crowding. Cook for 5-6 minutes without moving to develop a deep golden-brown crust.
  4. Flip the chicken breasts and reduce heat to medium. Cook an additional 5-7 minutes, flipping once if needed, until internal temperature reaches 160Β°F (71Β°C).
  5. Transfer chicken to a plate and loosely cover with foil. Let rest for 5 minutes.
