  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice (about half a lemon)
  • 1 teaspoon grated fresh ginger (optional)
  • ½ teaspoon red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Fresh lemon wedges (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Tear off four large sheets of aluminum foil—about 12 inches each.
  2. Season the salmon fillets with salt and pepper on both sides. Drizzle each fillet with about half a tablespoon of olive oil and rub it in gently.
  3. In a small bowl, whisk together the honey, soy sauce, minced garlic, lemon juice, and grated ginger if using. Taste and adjust honey or soy sauce to preference.
  4. Place one salmon fillet in the center of each foil sheet, skin-side down if skin is on. Spoon about 2 tablespoons of the sauce over each fillet, coating evenly. Reserve a little sauce for drizzling after cooking if desired.
  5. Bring the two long sides of the foil together over the salmon and fold them down tightly to create a seam. Fold the short ends up, crimping to seal. Ensure a snug packet with a little air space around the salmon.
  6. Place the packets on a baking sheet and bake for 12-15 minutes, depending on thickness. For 1-inch thick fillets, 12 minutes is usually perfect. Salmon should flake easily with a fork and register 145°F (63°C) internally.
  7. Carefully open the packets—hot steam will escape. Use tongs and open away from your face. If desired, broil for 1-2 minutes for extra browning.
  8. Transfer the salmon to plates using a spatula, spoon any remaining sauce from the foil over the top, and garnish with sliced green onions, sesame seeds, and lemon wedges. Serve immediately.

For best results, let salmon sit at room temperature for 10-15 minutes before cooking. Seal foil packets tightly to prevent sauce from leaking. Let packets rest for 1 minute before opening for more tender texture. If fillets vary in thickness, check thinner ones at 10 minutes. Do not double the sauce—it will dilute the flavors.
