  • 1 ½ teaspoons ground cinnamon (Saigon cinnamon recommended)
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 8 oz (226g) cream cheese, softened (full-fat, non-negotiable)
  • ¼ cup (30g) powdered sugar, sifted
  • ½ teaspoon vanilla extract (for filling)
  • 2 tablespoons pepitas (pumpkin seeds, optional topping)
  • 1 tablespoon coarse sugar (turbinado or demerara, optional topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with paper liners.
  2. Make the cream cheese filling first: In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth. Use a hand mixer on medium speed for about 2 minutes. Set aside.
  3. Mix the dry ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves for about 15 seconds.
  4. Mix the wet ingredients: In a separate medium bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and well combined.
  5. Combine wet and dry: Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold together until just combined—stop mixing as soon as you no longer see streaks of flour. A few small lumps are fine.
  6. Fill the muffin cups: Use a cookie scoop to drop a heaping tablespoon of batter into each liner, filling cups about ⅓ full.
  7. Add the cream cheese filling: Drop a rounded teaspoon of the cream cheese mixture right into the center of each muffin cup. Do not press it down or spread it around.
  8. Top with remaining batter: Divide the remaining batter evenly over the cream cheese filling, filling each cup about ⅔ to ¾ full. Gently spread the batter to cover the cream cheese without stirring it in.
  9. Add the topping: Sprinkle a few pepitas and a pinch of coarse sugar over each muffin.
