  • 8 oz (225g) salami, thinly sliced (preferably Genoa salami)
  • 6 oz (170g) prosciutto, thinly sliced
  • 6 oz (170g) pepperoni, thinly sliced
  • 4 oz (115g) capicola or soppressata, thinly sliced (optional)
  • 8 oz (225g) sharp cheddar cheese, cut into cubes or slices
  • 8 oz (225g) provolone cheese, sliced or cubed
  • 4 oz (115g) soft cheese, like brie or camembert
  • 4 oz (115g) goat cheese log, crumbled or sliced
  • 23 long strips of yellow bell pepper, cut into thin strips (for the laces)
  • 1 long strip of red bell pepper or a thin slice of prosciutto (for the center stripe)
  • 1 cup (150g) mixed olives (green and kalamata)
  • 1 cup (150g) cherry tomatoes, halved if large
  • 1/2 cup (75g) pickled vegetables, like cornichons or giardiniera
  • 1/2 cup (75g) roasted red peppers, sliced
  • 1/2 cup (60g) almonds or mixed nuts
  • 1 cup (150g) grapes, red or green
  • 1 small baguette, sliced and lightly toasted, or a box of crackers (sturdy crackers like water crackers or rosemary flatbread)
  • Fresh rosemary sprigs or thyme (for garnish)
  • Flaky sea salt, for sprinkling (optional)

Instructions

  1. Prepare Your Base (2 minutes): Lay your cutting board or baking sheet on a flat surface. If using parchment paper, cut it to fit the board and lay it flat.
  2. Create the Football Outline (5 minutes): Using your meats and cheeses, start outlining the shape of a football. Imagine an oval that’s slightly pointed at the ends. Start with a border of salami slices, overlapping them slightly to create a solid edge. Place the salami slices around the perimeter of the board, forming an elongated oval shape.
  3. Fill in the ‘Field’ (10 minutes): Inside your salami border, start filling the space. Place the cubes of cheddar cheese in clusters, leaving gaps for other ingredients. Add the slices of provolone, folding them in half for visual interest. Nestle the brie or camembert wheel somewhere near the center. Crumble the goat cheese in small piles around the board.
  4. Add the Meats (5 minutes): Take your prosciutto slices and fold them into loose ribbons or waves. Place them in the gaps between the cheese. Add the pepperoni slices in small piles. If using capicola, roll it into small cylinders. Distribute the meats evenly.
  5. Create the Laces (3 minutes): Take your strips of yellow bell pepper and lay them horizontally across the center of the board, about 1-2 inches apart. You’ll need 3-4 strips. Then, take your red bell pepper strip or prosciutto slice and lay it vertically down the center, crossing over the yellow strips. Press them gently into the cheese and meat.
  6. Fill in the Gaps (5 minutes): Fill the remaining empty spaces with your dippers and fillers. Place the small bowls of olives, pickles, and nuts in strategic spots. Scatter the cherry tomatoes and grapes in small clusters. Tuck the roasted red pepper slices between the cheese cubes.
  7. Add the Crackers and Bread (3 minutes): Arrange the baguette slices and crackers around the edges of the board, or in small piles near the cheeses. Spread them out so people can reach from any angle.
  8. Garnish and Serve (2 minutes): Finish by tucking small sprigs of fresh rosemary or thyme into the gaps. If using flaky sea salt, sprinkle a tiny bit over the cheese and tomatoes. Serve immediately, or cover with plastic wrap and refrigerate for up to 4 hours. Remove from the fridge 15 minutes before serving to let the cheeses come to room temperature.

Notes

Use a template if nervous about the football shape. Layer strategically, starting with largest ingredients. Keep board cold if assembling ahead. Don’t overcrowd. Balance flavors with salty, sweet, tangy, and rich elements. The laces can be added even after the board is being eaten.
