  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • ¾ cup all-purpose flour (divided)
  • 1 cup rolled oats
  • ½ cup (1 stick) cold unsalted butter, cubed
  • Vanilla bean ice cream, 1 pint or more for serving

Instructions

  1. Preheat the oven to 350°F (175°C) and position the rack in the center.
  2. Peel, pit, and slice peaches into roughly ½-inch slices. Toss with bourbon, brown sugar, granulated sugar, lemon juice, cinnamon, and ¼ cup flour. Let sit for 10–15 minutes.
  3. In a separate bowl, combine ¾ cup flour, rolled oats, brown sugar, and a pinch of salt. Add cold cubed butter and cut in with a pastry cutter or fingertips until mixture resembles coarse crumbs.
  4. Lightly grease an 8×8-inch baking dish. Pour peach mixture into the dish and spread evenly. Sprinkle crisp topping evenly over the peaches.
  5. Bake for 40–45 minutes until topping is golden brown and filling is bubbling. Tent with foil if topping browns too quickly.
  6. Let cool for about 10 minutes before serving. Serve warm topped with vanilla bean ice cream and optionally drizzle a little bourbon over the ice cream.

Notes

If peaches are very juicy, add an extra tablespoon of flour to the filling to prevent runniness. Let the crisp rest after baking to thicken the filling. Use cold butter for a flaky topping.
