  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) packed brown sugar
  • ⅓ cup (80ml) vegetable oil
  • ½ cup (120g) full-fat sour cream
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated zucchini (about 2 medium zucchinis), squeezed dry
  • 1 cup (175g) semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line it with paper liners.
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or paper towels.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  4. In a separate bowl, whisk together the granulated sugar, brown sugar, vegetable oil, sour cream, eggs, and vanilla extract until smooth and creamy.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  6. Fold in the squeezed zucchini and chocolate chips until evenly distributed.
  7. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
  8. Bake for 20-25 minutes, checking at 20 minutes with a toothpick. It should come out with a few moist crumbs but no wet batter.
  9. Remove muffins from the oven and let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Squeeze out excess moisture from zucchini to prevent soggy muffins. Use room temperature eggs and sour cream for better mixing. Fold ingredients gently to avoid tough muffins. Muffins freeze well; cool completely before freezing individually wrapped. Reheat by microwaving or toasting. Toss chocolate chips in a little flour before folding to prevent sinking.
