A hearty and satisfying taco soup made in the slow cooker with lean ground turkey, beans, corn, and a tangy ranch seasoning. This lightened-up version is quick, easy, and perfect for meal prep.

Ingredients

Scale
  • 1 lb lean ground turkey (93/7)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can (10 oz) diced tomatoes with green chiles (e.g., Rotel)
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen or canned corn (drained if canned)
  • 1 packet (1 oz) ranch seasoning mix
  • 2 tablespoons taco seasoning (low-sodium recommended)
  • Optional toppings: Greek yogurt or light sour cream, shredded cheddar cheese, fresh cilantro, sliced avocado, crushed tortilla chips, lime wedges

Instructions

  1. Prep the ingredients: Dice the onion and mince the garlic. Drain and rinse the black beans. If using canned corn, drain it. Open all cans of tomatoes.
  2. Brown the turkey (optional): Heat a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up, until no longer pink (8-10 minutes). You can skip this step and add raw turkey directly to the slow cooker.
  3. Layer in the slow cooker: Place the cooked or raw turkey in the bottom of a 6-quart slow cooker. Add the diced onion, minced garlic, fire-roasted tomatoes, diced tomatoes with green chiles, black beans, and corn.
  4. Add seasonings: Sprinkle the ranch seasoning mix and taco seasoning evenly over the top. Pour the chicken broth over everything. Stir well to combine.
  5. Cook: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the flavors are melded and the onions are tender.
  6. Finish and adjust: About 30 minutes before serving, taste and adjust salt and pepper if needed. For a thicker soup, mash some beans against the side of the slow cooker. Stir in a squeeze of fresh lime juice.
  7. Serve: Ladle into bowls and top with desired toppings such as Greek yogurt, shredded cheese, cilantro, avocado, tortilla chips, and lime wedges.

Notes

Browning the meat is optional but adds deeper flavor. Use low-sodium broth and taco seasoning to control salt. For a thicker soup, mash some beans. This soup freezes well for up to 3 months. Toppings should be added fresh after reheating.
