A festive, lighter take on a classic charcuterie board, featuring fresh herbs, crisp veggies, and leaner meats. Perfect for Friendsgiving, it comes together in under 20 minutes and is a crowd-pleaser.

Ingredients

Scale
  • 4 cups fresh arugula
  • 1 large cucumber, sliced into thin ribbons
  • 1 bunch radishes, thinly sliced
  • 1 cup fresh herbs (dill, parsley, chives)
  • 6 ounces prosciutto, thinly sliced
  • 4 ounces salami, cut into thin ribbons
  • 4 ounces fresh mozzarella pearls
  • 4 ounces goat cheese, softened
  • 1 cup red seedless grapes, halved
  • 1 cup cherry tomatoes, halved
  • 1/2 cup dried apricots, sliced
  • 1/2 cup Marcona almonds, toasted and lightly salted
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic glaze
  • Fresh rosemary and thyme sprigs for garnish
  • Flaky sea salt and cracked black pepper to finish

Instructions

  1. Prepare the base: Wash and dry all produce. Lay arugula in a circular wreath shape on a large platter, leaving the center empty.
  2. Add cucumber ribbons: Using a vegetable peeler, shave cucumber into long, thin ribbons. Drape over arugula, tucking gently.
  3. Layer radishes and herbs: Scatter sliced radishes evenly around wreath, then sprinkle fresh herbs over the top.
  4. Arrange meats: Fold prosciutto and salami into loose ribbons and tuck into greens in clusters.
  5. Add cheeses: Dot mozzarella pearls and dollops of softened goat cheese around the wreath.
  6. Place fruits and nuts: Scatter halved grapes, cherry tomatoes, dried apricots, and Marcona almonds evenly.
  7. Drizzle and garnish: Drizzle olive oil and balsamic glaze over wreath. Finish with flaky sea salt, cracked pepper, and rosemary/thyme sprigs around the edge.

Notes

Keep ingredients cold until assembling. Don’t overdress to avoid sogginess. Use a ring mold for a perfect wreath shape. Prep components up to one day ahead, but assemble no more than one hour before serving.
