Juicy Crockpot Pork Tenderloin Recipe with Easy Honey Dijon Glaze

A simple and flavorful crockpot pork tenderloin cooked low and slow with a tangy-sweet honey Dijon glaze that keeps the meat juicy and tender.

  • 1.5 to 2 pounds pork tenderloin, trimmed of excess fat
  • 1/4 cup honey (85 grams)
  • 1/4 cup Dijon mustard (60 grams)
  • 2 tablespoons apple cider vinegar (30 ml)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil (30 ml)
  • 1/2 cup chicken broth (120 ml), low sodium preferred
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried thyme or rosemary (optional)

Instructions

  1. Trim the pork tenderloin by removing any silver skin or excess fat.
  2. In a medium bowl, whisk together honey, Dijon mustard, apple cider vinegar, minced garlic, olive oil, and chicken broth until smooth. Add salt, pepper, and dried herbs if using.
  3. Lightly salt and pepper the pork on all sides.
  4. Place the pork tenderloin in the crockpot and pour the honey Dijon glaze evenly over the top, coating the meat.
  5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the internal temperature reaches 145°F (63°C).
  6. Optionally, halfway through cooking, baste the pork with some glaze from the bottom of the crockpot.
  7. Remove the pork from the crockpot and let it rest for 10 minutes before slicing.
  8. Optional: Pour the liquid from the crockpot into a small saucepan and simmer over medium heat until slightly thickened, about 5-7 minutes. Drizzle over sliced pork.

Notes

Use a meat thermometer to ensure pork reaches 145°F for safe consumption. Trimming silver skin is important to avoid chewy texture. Reducing the glaze after cooking thickens it and intensifies flavor. Adjust honey for lower sugar. Can substitute pork loin but adjust cooking time. If crockpot runs hot or cool, adjust cooking time accordingly.
