This hearty slow cooker beef vegetable soup is the ultimate comfort food—rich, beefy, and incredibly easy to make. Just dump everything in the slow cooker and let it simmer for hours while you enjoy your guests.

Ingredients

Scale
  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1 tablespoon olive oil (optional)
  • 1 large yellow onion, diced (about 2 cups)
  • 4 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste (start with 1 teaspoon salt and ½ teaspoon pepper)
  • 3 large carrots, peeled and sliced into ½-inch rounds (about 1½ cups)
  • 3 celery stalks, sliced (about 1 cup)
  • 1 pound Yukon Gold potatoes, peeled and cut into ¾-inch cubes (about 3 cups)
  • 1 cup frozen peas
  • 1 cup frozen corn kernels (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prep your ingredients (15 minutes): Cut the chuck roast into 1-inch cubes. Dice the onion, mince the garlic, slice the carrots and celery, and cube the potatoes.
  2. Layer everything in the slow cooker (5 minutes): Place the beef cubes in the bottom. Add the onion, garlic, carrots, celery, and potatoes on top. Pour in the beef broth and diced tomatoes with juices. Add bay leaves, thyme, rosemary, smoked paprika, salt, and pepper. Stir gently to combine.
  3. Cook low and slow (7-8 hours on low, 4-5 hours on high): Put the lid on and resist the urge to peek.
  4. Add the frozen vegetables (30 minutes before serving): Stir in the frozen peas and corn. Let them cook for about 30 minutes. Taste and adjust seasoning.
  5. Finish and serve (5 minutes): Remove the bay leaves. Ladle into bowls and garnish with fresh parsley. Serve with crusty bread or buttery crackers.

Notes

For best results, use a programmable slow cooker with a ‘keep warm’ setting. Let the soup rest on ‘keep warm’ for 30 minutes before serving to meld flavors. The soup thickens as it sits; add a splash of broth when reheating.
