Instructions

  1. In a mixing bowl, combine 1 cup of small-curd cottage cheese, ½ cup rolled oats, and 1 tablespoon chia seeds. Stir gently to evenly distribute oats and chia seeds.
  2. Add ½ cup unsweetened almond milk, ½ teaspoon ground cinnamon, and ½ teaspoon vanilla extract if using. Mix until well combined; mixture should be thick but pourable.
  3. Sweeten to taste with stevia or monk fruit sweetener, starting with a pinch and adjusting after tasting.
  4. Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 30 minutes, ideally overnight, to allow chia seeds to thicken and oats to soften.
