A vibrant and refreshing summer salad combining juicy watermelon, tangy feta, crisp cucumber, fresh mint, and zesty tajín seasoning for a perfect balance of sweet, salty, and smoky flavors.

  • 4 cups seedless watermelon, cut into bite-size cubes
  • 1 large English cucumber, peeled and thinly sliced
  • 1 cup crumbled feta cheese
  • ¼ cup fresh mint leaves, finely chopped
  • 2 teaspoons tajín seasoning
  • Juice of 1 lime (about 2 tablespoons)
  • 1 tablespoon extra virgin olive oil
  • Pinch of salt
  • Freshly ground black pepper, optional

Instructions

  1. Cut approximately 4 cups (about 600 grams) of seedless watermelon into bite-sized cubes and place in a large mixing bowl.
  2. Peel 1 large English cucumber and slice it thinly (about ¼ inch or 6 mm thick). Add to the bowl with watermelon.
  3. Finely chop about ¼ cup (10 grams) of fresh mint leaves and add to the bowl.
  4. Crumble 1 cup (150 grams) of good-quality feta cheese over the fruit and cucumber mix.
  5. Sprinkle 2 teaspoons of tajín seasoning evenly over the salad.
  6. Drizzle the juice of 1 fresh lime (about 2 tablespoons or 30 ml) and 1 tablespoon (15 ml) of extra virgin olive oil over the ingredients. Toss gently but thoroughly to combine flavors without mashing the watermelon.
  7. Add a pinch of salt to taste and, if desired, a few grinds of freshly ground black pepper. Toss gently again.
  8. Chill the salad in the fridge for 10-15 minutes before serving to meld flavors, but serve fresh to keep watermelon crisp.

Notes

Drain excess watermelon juice before tossing to prevent sogginess. Use fresh mint and dry it well to avoid watering down the salad. Adjust tajín seasoning to taste, starting with less if unfamiliar. Prepare just before serving or chill briefly to keep watermelon crisp. For dairy-free, substitute feta with vegan cheese or omit. Variations include adding toasted nuts, swapping cucumber for jicama, or grilling watermelon cubes for smoky flavor.
