Fresh Watermelon Feta Cucumber Salad with Mint

A quick, refreshing summer salad combining juicy watermelon, crisp cucumber, tangy feta, and fresh mint with a light lime dressing. Perfect for picnics, potlucks, or a light side dish.

Ingredients

  • 4 cups seedless watermelon, cut into bite-sized cubes
  • 2 medium cucumbers, peeled if preferred, diced or sliced thinly
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 small red onion, thinly sliced (optional)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • Pinch of sea salt, to taste
  • Freshly ground black pepper, a few cracks, to taste

Instructions

  1. Cut a 4-pound seedless watermelon into roughly 4 cups of bite-sized cubes (about 1-inch pieces). Set aside in a large bowl.
  2. Peel if desired, then slice or dice 2 medium cucumbers into similar bite-sized pieces as the watermelon. Add to the bowl with watermelon.
  3. Thinly slice about 1/4 of a small red onion. Soak the slices in cold water for 10 minutes to mellow if desired, then drain well. Add to the bowl.
  4. Crumble 1 cup of feta cheese evenly over the salad ingredients. If feta is too salty, rinse lightly under cold water and pat dry before adding.
  5. Roughly chop 1/4 cup fresh mint leaves and sprinkle over the salad.
  6. In a small bowl, whisk together 2 tablespoons extra virgin olive oil, 1 tablespoon fresh lime juice, a pinch of sea salt, and a few cracks of black pepper. Taste and adjust seasoning if needed.
  7. Gently toss all ingredients in the large bowl, making sure the dressing coats the watermelon and cucumber without breaking them down.
  8. Optionally refrigerate the salad for 15–30 minutes before serving to let flavors mingle. Serve chilled or at cool room temperature.

Notes

Use ripe but firm watermelon to avoid mushiness. Drain cucumbers if watery to prevent dilution. Rinse feta if too salty. Add dressing lightly to avoid overpowering watermelon flavor. Can be prepared a few hours ahead and refrigerated. Optional toppings include toasted pine nuts or pepitas for extra crunch.
