  • 3 cups seedless watermelon, diced
  • 2 cups fresh pineapple chunks
  • 1 cup strawberries, hulled and halved
  • 1 cup blueberries
  • 1 cup green grapes, halved
  • 1 ripe mango, peeled and diced
  • 1 kiwi, peeled and sliced (optional)
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon fresh mint, finely chopped (optional)
  • Pinch of sea salt

Instructions

  1. Rinse all fresh fruits thoroughly under cold water. Dice the watermelon into 1-inch cubes and pineapple chunks similarly sized. Hull and halve the strawberries, halve the grapes, peel and dice the mango, and slice the kiwi if using. Combine all fruit gently in a large mixing bowl.
  2. In a small bowl, whisk together the honey, fresh lime juice, lime zest, chopped mint, and a pinch of salt until smooth and well combined.
  3. Pour the honey lime dressing over the mixed fruit. Using a large spoon, gently toss everything to coat the fruit evenly without bruising it.
  4. Cover the salad and refrigerate for at least 30 minutes before serving to let the flavors meld and the fruit chill.
  5. Just before serving, give the salad a quick stir, taste, and adjust lime juice or honey if desired. Garnish with a few whole mint leaves.

Notes

Be gentle when tossing to keep fruit intact. Drain excess watermelon juice if too watery. Dressing can be made a day ahead and whisked again before use. Mint is optional but recommended. Keep salad chilled until serving. For vegan option, substitute honey with agave or maple syrup.
