  • 2 medium ripe but firm avocados, diced
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 cup (150 g) fresh corn kernels (from about 2 ears) or frozen and thawed
  • 1 small red bell pepper, diced
  • 1/4 cup (40 g) red onion, finely chopped
  • 1/4 cup (10 g) cilantro, chopped (optional)
  • 3 tablespoons (45 ml) freshly squeezed lime juice
  • 2 tablespoons (30 ml) extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 small jalapeño, seeded and minced (optional)

Instructions

  1. Prepare the Vegetables and Beans (10 minutes): Rinse and drain the canned black beans thoroughly. Dice the red bell pepper, finely chop the red onion, halve the cherry tomatoes, and cut the fresh corn kernels off the cob if using fresh. Mince the jalapeño after removing seeds if using. Keep the avocado last to prevent browning.
  2. Make the Dressing (2 minutes): In a small bowl, whisk together the fresh lime juice, olive oil, ground cumin, salt, and pepper. Taste and adjust seasoning.
  3. Combine Ingredients (5 minutes): In a large mixing bowl, gently toss together the black beans, corn, red bell pepper, onion, tomatoes, jalapeño (if using), and cilantro. Pour the dressing over and stir carefully to coat evenly.
  4. Add the Avocado (2 minutes): Dice the avocado into medium-sized chunks and gently fold them into the mixture to avoid mushing.
  5. Chill and Marinate (Optional, 30 minutes): Cover and refrigerate for at least 30 minutes to let flavors meld. Serve chilled or at cool room temperature.

Notes

Rinse and drain beans well to avoid metallic taste. Use firm but ripe avocados to keep chunks intact. Fold avocado gently to prevent mushiness. Add avocado last and just before serving to prevent browning. Fresh lime juice is key for bright flavor. Can be made ahead except avocado. Store leftovers with plastic wrap pressed on surface to keep avocado fresh.
