A quick and easy creamy avocado lime dressing made with just three simple ingredients. Perfect for salads, grain bowls, and as a dip, this dressing blends fresh, vibrant flavors with a silky texture in under five minutes.

  • 1 medium ripe avocado
  • 2 tablespoons fresh lime juice (from 12 limes)
  • 3 tablespoons extra virgin olive oil

Instructions

  1. Cut the avocado in half, remove the pit, and scoop the flesh into your blender or food processor bowl.
  2. Juice 1-2 limes, aiming for about 2 tablespoons (30 ml). Add the lime juice to the blender.
  3. Pour in 3 tablespoons (45 ml) of extra virgin olive oil.
  4. Pulse the mixture on medium speed for about 30 seconds, then blend continuously for another 30 seconds or until completely smooth.
  5. If the dressing is too thick, add a teaspoon of water at a time and blend again until desired consistency is reached.
  6. Taste and optionally add a pinch of salt or a drizzle of honey for balance, then blend briefly again if added.
  7. Serve immediately or store in an airtight jar in the fridge for up to 2 days.

Notes

Add lime juice and olive oil first in the blender to help blend smoother. Use ripe but firm avocados for best texture. Fresh lime juice is essential for vibrant flavor. If dressing thickens or browns slightly after storage, stir or re-blend before serving. Optional additions include sea salt, honey, herbs, jalapeΓ±o, garlic, or yogurt alternatives for variations.
