  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Mix dry ingredients: In a large mixing bowl, whisk together flour, sugar, baking soda, baking powder, and salt until evenly combined (about 2 minutes).
  2. Combine wet ingredients: In a separate bowl or measuring cup, whisk buttermilk, egg, melted butter, and vanilla extract until smooth (1-2 minutes).
  3. Fold wet into dry: Pour wet mixture into dry ingredients and gently stir just until combined; some lumps are fine (about 1 minute).
  4. Preheat skillet: Place skillet or griddle over medium heat and warm for about 5 minutes; test by sprinkling water drops that should sizzle and evaporate.
  5. Cook pancakes: Lightly butter skillet before first pancake. Pour about ¼ cup batter per pancake. Cook 2-3 minutes until bubbles form and edges set, flip and cook 1-2 minutes until golden and cooked through. Adjust heat as needed.
