Transform your coffee routine with a festive pumpkin cold foam that adds creamy texture and subtle spice. This easy recipe is perfect for Halloween parties or cozy fall mornings.

Ingredients

Scale
  • 1 cup cold milk (whole, 2%, or plant-based like oat or almond for vegan option)
  • 2 tablespoons pumpkin puree (unsweetened; canned pumpkin recommended)
  • 1 tablespoon maple syrup or honey (maple adds a lovely autumn vibe)
  • 1/2 teaspoon pumpkin pie spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • 1/2 teaspoon vanilla extract (pure vanilla is best for aroma)
  • Freshly brewed espresso or strong coffee (about 8 oz / 240 ml per serving)
  • Optional toppings: ground cinnamon or extra pumpkin pie spice for dusting
  • Optional toppings: whipped cream (dairy or coconut-based for vegan)
  • Optional toppings: chocolate shavings or caramel drizzle for extra flair

Instructions

  1. Brew about 8 oz (240 ml) of strong coffee or espresso and set aside.
  2. In a mixing bowl or large mug, combine 1 cup cold milk, 2 tablespoons pumpkin puree, 1 tablespoon maple syrup, 1/2 teaspoon pumpkin pie spice, and 1/2 teaspoon vanilla extract.
  3. Whisk gently until the pumpkin puree is evenly incorporated and smooth. Microwave for 10 seconds if the puree is too thick.
  4. Froth the mixture using a milk frother until it doubles in volume and becomes light and airy (about 30-45 seconds). Alternatively, shake vigorously in a sealed jar for about 1 minute.
  5. Pour coffee into clear mugs or glasses, filling about 3/4 full.
  6. Spoon or pour the pumpkin cold foam gently over the coffee to create a creamy cap.
  7. Dust with ground cinnamon or extra pumpkin pie spice. Optionally, add whipped cream and a drizzle of caramel.
  8. Serve immediately and enjoy the contrast between warm coffee and cool foam.

Notes

Use cold milk for better froth and lighter foam. Whole milk or oat milk produce the creamiest foam. Avoid overfilling the frother to allow foam expansion. Adjust pumpkin pie spice to taste. Fresh pumpkin puree can be used but must be cooked and pureed smooth. Foam is best served fresh but can be stored up to 24 hours in the fridge with reduced frothiness.
