Flavorful Maple BBQ Bacon-Wrapped Corn on the Cob

A smoky-sweet twist on classic grilled corn, wrapped in crispy bacon and glazed with a sticky maple BBQ sauce, perfect for summer BBQs and crowd-pleasing gatherings.

  • Fresh corn on the cob, husked and cleaned
  • Thick-cut bacon slices (2-3 per ear)
  • ½ cup pure maple syrup
  • ½ cup smoky BBQ sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Freshly ground black pepper, to taste
  • Olive oil or melted butter, for brushing
  • Optional: Fresh herbs like chopped parsley or cilantro for garnish

Instructions

  1. Preheat your grill to medium heat, about 350°F (175°C).
  2. In a mixing bowl, combine maple syrup, BBQ sauce, garlic powder, smoked paprika, and black pepper. Stir until smooth and set aside.
  3. Remove husks and silk strands from the corn. Lightly brush each ear with olive oil or melted butter.
  4. Wrap each ear with 2-3 slices of thick-cut bacon, overlapping slightly. Secure ends by tucking under the ear or using toothpicks if needed.
  5. Place the bacon-wrapped corn on the grill. Cook for 20-25 minutes, turning every 5 minutes. Watch for flare-ups and move corn to cooler parts if bacon chars too fast.
  6. After the first 10 minutes, baste the ears every 5 minutes with the maple BBQ glaze to build a sticky, caramelized coating.
  7. Check doneness by piercing the corn with a fork; the corn should be tender and bacon crispy and caramelized. Move to indirect heat if needed to finish cooking without burning.
  8. Remove from grill and let rest for 5 minutes. Optionally, sprinkle with fresh herbs before serving.

Notes

Keep a spray bottle of water handy to control flare-ups from bacon fat. Use thick-cut bacon to prevent burning and maintain moisture. Turn corn gently every 5 minutes to keep bacon and glaze intact. For indoor cooking, bake at 400°F (200°C) for 30-35 minutes, basting halfway through.
