  • 2 cups fresh peaches, peeled and chopped (frozen peaches can substitute)
  • 1/4 cup good-quality bourbon (e.g., Maker’s Mark)
  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup packed light brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Peel, pit, and chop about 2 cups of fresh peaches. This should take about 10 minutes.
  2. In a medium saucepan, combine the chopped peaches, bourbon, and apple cider vinegar. Bring to a gentle simmer over medium heat and cook for about 10 minutes, stirring occasionally, until peaches soften and bourbon aroma fills the kitchen.
  3. Remove the saucepan from heat. Using an immersion blender, puree the peach mixture until smooth. If using a regular blender, carefully transfer the mixture in batches and blend until smooth.
  4. Return the peach puree to the saucepan. Stir in ketchup, brown sugar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, black pepper, and optional red pepper flakes.
  5. Cook over low heat, stirring occasionally, for about 15-20 minutes until the sauce thickens slightly and develops a rich, glossy texture.
  6. Taste and adjust seasoning: add more brown sugar if too tangy or more red pepper flakes for extra kick.
  7. Remove from heat and let cool for 10-15 minutes. Pour the sauce into clean mason jars, seal tightly, and store in the refrigerator for up to two weeks.

Notes

If sauce thickens too much after cooling, stir in a teaspoon or two of water or more bourbon to loosen it. Use quality bourbon for best flavor. Peeling peaches is recommended for a smoother texture but can be skipped for more texture. Simmer uncovered to thicken sauce and concentrate flavors. Blend while warm for smoothness.
