Easy Slow Cooker Sloppy Joes - featured image

A simple, reliable, and delicious slow cooker sloppy joes recipe perfect for busy weeknights and family gatherings. This comforting dish features tender ground beef in a rich, tangy sauce that melds beautifully with toasted buns.

Ingredients

Scale
  • 1.5 pounds ground beef (80/20 for best flavor and juiciness)
  • 1 medium yellow onion, finely chopped
  • 1 small green bell pepper, diced (optional)
  • 2 garlic cloves, minced
  • 1 cup tomato sauce
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon chili powder
  • Salt and black pepper, to taste
  • 6 to 8 hamburger buns, toasted if desired

Instructions

  1. Optional: Brown the ground beef in a skillet over medium heat until no longer pink, about 10 minutes. Drain excess fat.
  2. Add the ground beef (browned or raw), chopped onion, diced bell pepper, and minced garlic to the slow cooker.
  3. Pour in the tomato sauce, ketchup, Worcestershire sauce, brown sugar, Dijon mustard, and chili powder. Stir until well combined. Season with salt and pepper.
  4. Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours if short on time.
  5. About 15 minutes before serving, stir the mixture and adjust seasoning as needed. If too watery, remove the lid and cook on high for 15 minutes to thicken.
  6. Toast the hamburger buns lightly to prevent sogginess.
  7. Spoon the sloppy joe mixture onto buns and serve immediately.

Notes

Browning the beef is optional but adds flavor and better texture. If the sauce is too watery, remove the lid near the end and cook on high to thicken. Toast buns before assembling to prevent sogginess. Stir halfway through cooking if your slow cooker cooks unevenly.
