Easy Red White and Blueberry Icebox Cake: Perfect 4th of July Dessert

A no-bake icebox cake with layers of graham crackers, whipped cream, and fresh strawberries and blueberries, perfect for summer celebrations like the Fourth of July.

  • 2 full boxes graham crackers (about 2430 full sheets)
  • 4 cups (960 ml) heavy whipping cream
  • 1/2 cup (60 grams) powdered sugar
  • 2 teaspoons (10 ml) vanilla extract
  • 2 pounds (about 900 grams) fresh strawberries, hulled and sliced
  • 1 1/2 pints (about 450 grams) fresh blueberries
  • Optional garnish: extra berries, mint leaves, or a dusting of powdered sugar

Instructions

  1. Whip the cream: In a chilled large mixing bowl, pour in the 4 cups of heavy whipping cream. Add the 1/2 cup of powdered sugar and 2 teaspoons of vanilla extract. Beat on medium-high speed until soft peaks form, about 3 to 4 minutes with a hand mixer.
  2. Prep the berries: Hull and slice the strawberries into even pieces. Rinse the blueberries and pat them dry with a paper towel.
  3. Layer the base: Spread a thin layer of whipped cream (about 1/4 cup) on the bottom of a 9×13-inch dish. Arrange a single layer of graham crackers on top, breaking pieces as needed to fill gaps.
  4. Add the first fruit layer: Spread about 1 cup of whipped cream evenly over the graham crackers. Scatter a third of the sliced strawberries and a third of the blueberries over the cream. Press them in gently.
  5. Repeat the layers: Add another layer of graham crackers, then another cup of cream, then another third of the berries. Repeat until all graham crackers, cream, and berries are used, ending with a top layer of cream.
  6. Decorate the top: Use the remaining cream to create a smooth, even top. Arrange extra strawberries and blueberries in a flag pattern or a simple star shape.
  7. Chill overnight: Cover the dish with plastic wrap or foil and refrigerate for at least 6 hours, but preferably 8 to 12 hours.
  8. Serve cold: Slice into squares and serve straight from the fridge. Garnish with mint leaves if desired.

Notes

Chill the mixing bowl and beaters for 10-15 minutes before whipping cream for best results. Pat berries dry to prevent sogginess. Assemble the night before for best texture. For dairy-free, use full-fat coconut cream (chilled overnight) whipped with powdered sugar.
