A magical, color-changing Halloween mocktail made with butterfly pea flower tea and lemonade. This quick and easy drink transforms from deep blue to swirling purple right before your eyes, creating a cozy, non-alcoholic treat perfect for all ages.

Ingredients

Scale
  • 2 butterfly pea flower tea bags (recommended: Tea Forte or Rishi)
  • 2 cups water, boiling
  • 1/2 cup lemonade, chilled (clear lemonade preferred)
  • 1 cup ice cubes
  • 2 tablespoons simple syrup (optional; substitute honey or agave)
  • Fresh lemon slices (for garnish)
  • Edible glitter or star anise (optional, for garnish)

Instructions

  1. Steep the tea: Bring 2 cups of water to a rolling boil. Pour the hot water into a heatproof pitcher or measuring cup. Add the 2 butterfly pea flower tea bags and let them steep for 5-7 minutes. The water will turn a deep, almost electric blue. Remove the tea bags and let the tea cool to room temperature, about 10 minutes (or refrigerate for 5 minutes to speed up).
  2. Prepare your glasses: While the tea is cooling, fill your serving glasses with ice cubes. For extra flair, use ice cubes with frozen edible flowers or berries. Place the glasses in the freezer for a few minutes to frost them up.
  3. Add the sweetener: Stir 2 tablespoons of simple syrup (or your preferred sweetener) into the cooled blue tea. Taste and adjust sweetness as needed.
  4. Pour the tea over ice: Divide the sweetened blue tea evenly between the prepared glasses, pouring slowly over the ice.
  5. Add the lemonade — watch the magic happen: Slowly pour 1/4 cup of chilled lemonade into each glass. Do not stir yet. Watch as the lemonade hits the blue tea, causing a pH shift that changes the color from deep blue to a swirling purple. Give it a gentle stir with a long spoon to fully incorporate the color.
  6. Garnish and serve: Add a fresh lemon slice to the rim of each glass. For an extra witchy touch, sprinkle a pinch of edible glitter on top or float a star anise in the drink. Serve immediately while the color is at its most vibrant and the drink is ice-cold.

Notes

For the most dramatic color change, use high-quality butterfly pea flower tea and fresh lemonade. Let the tea cool completely before adding lemonade to avoid a muddy color. If the drink doesn’t turn purple, add a squeeze of fresh lemon juice. Store leftover tea (without lemonade) in an airtight container in the refrigerator for up to 3 days.
