  • Baby carrots or snap peas
  • Small container of hummus or ranch dip (optional)

Instructions

  1. In a mixing bowl, combine softened cream cheese with shredded carrot, chopped cucumber, and parsley or chives if using. Add a pinch of salt and pepper. Mix thoroughly until well combined and creamy.
  2. Place one flour tortilla flat on a clean surface. Spread approximately 2 tablespoons (30 g) of the cream cheese mixture evenly over the entire tortilla, leaving about half an inch at the edges.
  3. Arrange 2-3 slices of deli turkey evenly over the cream cheese layer, overlapping slightly to cover the surface.
  4. Roll the tortilla tightly but gently into a log shape. Wrap in plastic wrap or parchment paper and refrigerate for at least 10 minutes to firm up.
  5. Remove from fridge and unwrap. Using a sharp serrated knife, slice the roll into 1-inch (2.5 cm) thick rounds, yielding about 6-8 pinwheels per tortilla. Arrange flat side down.
  6. Place turkey pinwheels in one compartment of a bento box. Fill other sections with fresh fruit slices, cheese cubes, and baby carrots or snap peas. Add a small container of hummus or ranch dip if desired.
  7. Cover the bento box tightly to maintain freshness. Store in the refrigerator until ready to serve.
