  • 1/4 cup (45g) mini chocolate chips (optional)
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt (if peanut butter is unsalted)

Instructions

  1. Mash the banana in a large mixing bowl until smooth with a few small lumps.
  2. Add peanut butter, honey, and vanilla extract; stir until well combined.
  3. Add rolled oats, ground flaxseed, and salt; stir until all oats are evenly coated.
  4. Fold in mini chocolate chips gently.
  5. Chill the mixture in the refrigerator for 10 minutes (optional but recommended).
  6. Scoop about 1 tablespoon of mixture and roll into smooth balls. Wet hands slightly if sticky.
  7. Place balls on a parchment-lined baking sheet and refrigerate for 15-30 minutes to firm up.
  8. Transfer to an airtight container and store in the refrigerator for up to 1 week or freeze for up to 3 months.
