Easy Overnight Cinnamon Roll French Toast Casserole

A cozy and fuss-free breakfast casserole combining cinnamon rolls soaked overnight in a custardy egg mixture, baked to golden perfection and topped with a sweet glaze.

  • 1 package (about 8 rolls) refrigerated cinnamon rolls with icing included
  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk or 2% milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • Optional toppings: powdered sugar for dusting, extra icing or maple syrup for drizzling, fresh berries or sliced bananas

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  3. Cut the cinnamon rolls into 1 to 2-inch chunks.
  4. Place the cinnamon roll pieces evenly in the baking dish, pressing down lightly.
  5. In a mixing bowl, whisk together eggs, milk, vanilla extract, ground cinnamon, sugar, and salt until well combined and slightly frothy.
  6. Pour the custard evenly over the cinnamon roll pieces in the baking dish.
  7. Cover the dish tightly with aluminum foil and refrigerate overnight or at least 6 hours.
  8. The next morning, remove the casserole from the fridge and let it sit at room temperature for about 15 minutes while preheating the oven to 350°F (175°C).
  9. Bake covered with foil for 30 minutes.
  10. Remove the foil and bake an additional 15 to 20 minutes uncovered until the top is golden brown and the custard is set.
  11. Remove from oven and let cool 5-10 minutes.
  12. Drizzle with the icing that came with the cinnamon rolls or your own glaze. Dust with powdered sugar or garnish with fresh fruit if desired.
  13. Serve warm and enjoy.

Notes

Use room temperature eggs and milk for a smoother custard. Do not skip the overnight soak to ensure cinnamon rolls absorb the custard well. Cover tightly with foil while soaking and during the first part of baking to retain moisture. Watch baking time closely and tent with foil if edges brown too fast. For dairy-free or gluten-free versions, substitute milk and cinnamon rolls accordingly.
