  • 1 cup (90g) rolled oats
  • ½ cup (125g) natural peanut butter (creamy or chunky)
  • ¼ cup (30g) chocolate protein powder
  • 3 tablespoons (45ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 tablespoon (7g) unsweetened cocoa powder
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt
  • Optional add-ins: ¼ cup (43g) mini dark chocolate chips, finely chopped nuts (almonds or walnuts), almond or sunflower seed butter as nut-free alternative

Instructions

  1. In a mixing bowl, combine 1 cup rolled oats, ¼ cup chocolate protein powder, 1 tablespoon unsweetened cocoa powder, 1 tablespoon chia seeds (if using), and a pinch of salt. Stir to blend evenly.
  2. Add ½ cup natural peanut butter, 3 tablespoons honey or maple syrup, and 1 teaspoon vanilla extract. Stir until the mixture is thick and sticky. Add more honey or a splash of water if too dry.
  3. Mix thoroughly using a spatula or hands until oats are well coated and mixture holds together without crumbling.
  4. Scoop about 1 tablespoon (15g) of mixture and roll between palms to form firm balls. Place on a parchment-lined baking sheet or plate. Makes about 15 to 18 balls.
  5. Chill in the refrigerator for at least 30 minutes to firm up and meld flavors. 15 minutes can work if in a rush.
  6. Store in an airtight container in the fridge for up to one week or freeze for up to three months.

Notes

Use old-fashioned rolled oats for best texture; quick oats may get mushy. Room temperature peanut butter mixes easier. Wet hands lightly when rolling to prevent sticking. Chilling is key for firm texture. Adjust syrup amount if using different nut or seed butters. Store in airtight container; freeze for longer storage.
