  • 1 can (16.3 oz) refrigerated biscuit dough (e.g., Pillsbury Grands!)
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup mini pepperoni slices
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Optional add-ins: diced bell peppers, mushrooms, cooked sausage, or black olives

Instructions

  1. Preheat your oven to 375°F (190°C). Brush your mini muffin tin generously with olive oil.
  2. Pop open the can of biscuit dough. Separate the biscuits and place them on a lightly floured surface. Using a rolling pin, flatten each biscuit into a circle about 3 inches wide.
  3. Cut each flattened biscuit into quarters. You should get four pieces from each biscuit.
  4. Press one dough piece into each muffin cup. Use your fingers to gently push the dough up the sides, forming a little cup shape. The dough should come about halfway up the sides of the cup.
  5. Spoon about 1/2 teaspoon of pizza sauce into each dough cup. Spread it gently with the back of the spoon.
  6. Sprinkle about 1 tablespoon of shredded mozzarella into each cup.
  7. Place 2-3 mini pepperoni slices on top of the cheese. If using add-ins, add them now.
  8. Give each pizza bite a tiny dusting of garlic powder and Italian seasoning.
  9. Bake for 10-12 minutes, until the edges are golden brown and the cheese is bubbly and slightly browned.
  10. Cool in the pan for 2 minutes. Use a small fork or butter knife to gently lift them out of the cups. Transfer to a wire rack to cool completely if packing for later.

Notes

Don’t overwork the dough to keep it light and flaky. Watch the sauce-to-cheese ratio: 1/2 teaspoon sauce to 1 tablespoon cheese per bite. These freeze beautifully: bake, cool, freeze on a baking sheet, then transfer to a freezer bag. Reheat in a 350°F oven for 5-7 minutes or microwave for 30 seconds. For best results, let cool in the pan for 2 minutes before removing to prevent sticking.
