  • ½ cup (120 ml) marinara sauce
  • ¼ cup (60 g) ricotta cheese
  • ¼ cup (30 g) shredded mozzarella cheese
  • 1 tablespoon (5 g) grated Parmesan cheese
  • 1 small egg, beaten (optional)
  • ½ teaspoon dried Italian seasoning
  • Pinch of salt
  • Pinch of black pepper
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. In a small bowl, mix the ricotta cheese with the beaten egg (if using), a pinch of salt, a pinch of black pepper, and ¼ teaspoon of Italian seasoning. Stir until smooth.
  2. Break 3 to 4 no-boil lasagna noodles into small squares about 1 inch by 1 inch. You’ll need about 8 to 10 pieces total for three layers.
  3. Spoon 2 tablespoons of marinara sauce into the bottom of a microwave-safe mug. Spread it evenly.
  4. Place a single layer of broken noodle pieces over the sauce. Press them down gently so they’re submerged in the sauce.
  5. Spoon 1 tablespoon of the ricotta mixture over the noodles. Spread it gently with the back of a spoon.
  6. Sprinkle about 1 tablespoon of shredded mozzarella over the ricotta. Add a tiny pinch of Parmesan.
  7. Repeat steps 3 through 6 two more times to create three layers total. End with a final layer of sauce, a generous sprinkle of mozzarella, and a dusting of Parmesan. Add a pinch of Italian seasoning on top.
  8. Place the mug on a microwave-safe plate or paper towel. Microwave on high for 2 minutes. Check the noodles—they should be tender and the cheese bubbly. If the noodles are still firm, microwave in 30-second increments for up to 1 more minute.
  9. Let the mug lasagna rest for 1 minute. Garnish with fresh basil or parsley if desired. Serve directly from the mug.

Notes

Don’t overfill the mug—leave about half an inch of space at the top to prevent overflow. Cover the mug loosely with a paper towel to trap steam and prevent splatters. Let the lasagna rest for 1 minute after microwaving to allow layers to set. For a smaller mug (8 oz), reduce to two layers and microwave for 1 minute 30 seconds. Adjust cooking time based on microwave wattage.
