Ingredients

Scale
  • 1 pound carrots (about 6–8 medium), peeled and halved lengthwise if thick
  • 2 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 cup tahini, well-stirred
  • 2 tablespoons lemon juice, fresh squeezed
  • 2–3 tablespoons warm water
  • 1 small garlic clove, minced or grated
  • 1/4 teaspoon salt
  • Pinch of cumin (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon toasted sesame seeds (optional)
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven. Line a baking sheet with parchment paper.
  2. Peel the carrots and trim off the tops. If thick (more than 1 inch in diameter), cut in half lengthwise. For thinner carrots, leave whole. Aim for pieces about 1/2 inch thick at the widest point.
  3. In a large bowl, whisk together olive oil, maple syrup, salt, pepper, and garlic powder (if using). Add carrots and toss well until every piece is coated.
  4. Spread carrots in a single layer on the prepared baking sheet, ensuring they are not touching or overlapping too much.
  5. Roast for 20-25 minutes, flipping halfway through (at about 12 minutes) with tongs. Carrots are done when tender and edges are golden brown with caramelized spots.
  6. While carrots roast, make the tahini sauce: In a small bowl, combine tahini, lemon juice, minced garlic, and salt. Whisk vigorously—it will seize up at first. Slowly add warm water, one tablespoon at a time, whisking continuously until smooth, creamy, and pourable. Adjust consistency with more water or tahini as needed. Taste and adjust salt or lemon.
  7. Transfer hot roasted carrots to a serving platter. Drizzle tahini sauce generously over the top. Sprinkle with fresh parsley, toasted sesame seeds, and a pinch of flaky sea salt. Serve immediately.

Notes

For best caramelization, pat carrots completely dry after washing. If your oven runs hot, check carrots at 18 minutes. Reserve a bit of the maple-olive oil mixture to brush on carrots after flipping for extra glaze. Tahini sauce benefits from sitting at room temperature for 10-15 minutes before serving. Store carrots and sauce separately in the refrigerator for up to 4 days.
