Instructions

  1. Activate the Yeast: In the bowl of your stand mixer, combine the warm water, sugar, and active dry yeast. Let it sit for 5-10 minutes until frothy and bubbly.
  2. Make the Dough: Add the melted butter, salt, and 2 cups of flour to the yeast mixture. Mix on low speed until combined. Gradually add the remaining 2 cups of flour until a shaggy dough forms.
  3. Knead the Dough: Knead on medium-low speed for 5-7 minutes, or by hand for 8-10 minutes, until smooth and elastic.
  4. First Rise: Form the dough into a ball and place in a lightly greased bowl. Cover and let rise in a warm place for about 1 hour, until doubled in size.
  5. Shape the Bites: Punch down the dough and divide into four equal pieces. Roll each piece into a 1-inch thick rope, then cut into 1-inch pieces.
  6. Prepare the Baking Soda Bath: Preheat oven to 425°F (220°C). Bring a large pot of water to a rolling boil and carefully add ⅓ cup baking soda.
