These quick and easy Halloween Rice Krispie Treats with Candy Eyes are the perfect last-minute dessert for school parties, family movie nights, or any spooky celebration. Made with simple pantry staples, they come together in about 15 minutes and are sure to be a crowd-pleaser.

Ingredients

Scale
  • 3 tablespoons unsalted butter
  • 1 package (10 ounces) regular marshmallows (about 40 large or 4 cups mini)
  • 6 cups crispy rice cereal
  • 1/4 teaspoon vanilla extract (optional)
  • 1/4 teaspoon salt
  • Orange gel food coloring (about 1/8 teaspoon)
  • 1/2 cup candy eyes
  • Optional: 1-2 drops black gel food coloring for decorations

Instructions

  1. Line a 9×13-inch baking dish with parchment paper, leaving overhang on two opposite sides. Lightly spray the parchment with nonstick cooking spray.
  2. Place a large pot over medium-low heat. Add the butter and melt slowly, swirling occasionally, until fully melted with tiny bubbles around the edges.
  3. Add the marshmallows to the melted butter. Stir constantly until completely smooth and melted, about 4-5 minutes. Do not let the mixture brown.
  4. Remove the pot from heat. Stir in the vanilla extract, salt, and orange gel food coloring until evenly distributed. Add more coloring if needed for a vibrant orange.
  5. Pour the crispy rice cereal into the pot. Fold gently with a rubber spatula until every piece is coated, about 1-2 minutes. Do not overmix.
  6. Scrape the mixture into the prepared baking dish. Spray the spatula with nonstick spray and gently press the mixture into an even layer. Do not press too hard.
  7. While the mixture is still warm and tacky (about 2-3 minutes after pressing), press the candy eyes into the surface, spacing them randomly.
  8. Let the treats cool at room temperature for at least 30 minutes. Do not refrigerate.
  9. Lift the block out using the parchment handles. Cut into 12 large or 24 small squares using a sharp knife. Wipe the knife clean between cuts.

Notes

Do not refrigerate the treats as it makes them hard. For best texture, use gel food coloring instead of liquid. The candy eyes should be added while the mixture is still warm but not hot. If making ahead, store in an airtight container at room temperature for up to 3 days. For freezing, wrap individually and freeze for up to 3 months; add eyes after thawing.
