These adorable ghost-shaped Rice Krispie treats are dipped in white chocolate and decorated with candy eyes, making them the perfect quick and easy Halloween party snack. They come together in under 20 minutes and are a guaranteed crowd-pleaser.

Ingredients

Scale
  • 3 tablespoons unsalted butter
  • 1 package (10 oz) regular marshmallows (about 40 large or 4 cups mini)
  • 6 cups Rice Krispies cereal
  • ¼ teaspoon vanilla extract
  • Pinch of salt
  • 1 cup white chocolate chips or melting wafers
  • 1 tablespoon coconut oil or vegetable shortening
  • Candy eyes (about 48 for 24 ghosts)
  • Optional: Orange and black sprinkles

Instructions

  1. Line a 9×13-inch baking pan with parchment paper, leaving overhang. Lightly grease the parchment with butter or non-stick spray.
  2. In a large saucepan over medium-low heat, melt 3 tablespoons unsalted butter.
  3. Add the marshmallows and stir constantly until completely melted and smooth, about 5-7 minutes.
  4. Remove from heat and stir in ¼ teaspoon vanilla extract and a pinch of salt.
  5. Pour in 6 cups Rice Krispies cereal and fold gently until every piece is coated.
  6. Transfer mixture to prepared pan. Lightly grease your hands and press the mixture evenly to about ½ to ¾ inch thick.
  7. Cool at room temperature for at least 30 minutes until firm.
  8. Lift the block out using parchment overhang. Cut into ghost shapes (about 3×2 inches) with a serrated knife, rounding the top edges.
  9. In a small microwave-safe bowl, combine 1 cup white chocolate chips and 1 tablespoon coconut oil. Microwave in 30-second intervals, stirring after each, until smooth (1-2 minutes total).
  10. Line a baking sheet with parchment. Dip each ghost into the melted white chocolate using a fork, covering about half to two-thirds. Let excess drip off, then place on the baking sheet.
  11. While the white chocolate is still wet, press two candy eyes onto each ghost near the top of the dipped portion.
  12. Let set at room temperature for 20-30 minutes, or refrigerate for 10 minutes until firm.

Notes

For perfectly shaped ghosts, chill the cut treats in the freezer for 10 minutes before dipping. If white chocolate seizes, add another tablespoon of coconut oil and microwave for 10 seconds, then stir. Store in an airtight container at room temperature for up to 5 days. Freeze undipped treats for up to 3 months.
