  • 1 cup crushed waffle cones
  • ½ cup chocolate sauce
  • ½ cup caramel sauce
  • ½ cup toasted pecans, chopped
  • 1 cup whipped cream

  • Flaky sea salt (optional)
  • Balsamic glaze (optional)
  • Fresh berries (optional)

Instructions

  1. Preheat your grill to medium-high heat (about 400°F / 200°C). Clean the grates and lightly oil them with a paper towel dipped in vegetable oil.
  2. In a small bowl, whisk together honey, bourbon (if using), vanilla extract, and melted unsalted butter to make the glaze.
  3. Wash and halve the peaches along the natural seam, removing the pit. Leave the skin on.
  4. Brush the cut side of each peach half with the glaze, reserving about half for later.
  5. Place the peaches cut side down on the hot grill. Grill for 3-4 minutes without moving, until grill marks appear and the peaches start to caramelize.
  6. Flip the peaches using tongs, brush the skin side with the reserved glaze, and grill for another 2-3 minutes until tender but still holding shape.
  7. Remove the peaches from the grill and let them rest for 2-3 minutes on a cutting board or platter.
  8. Slice each peach half into 3-4 wedges, or leave whole for a rustic presentation.
  9. Set up a sundae bar with bowls of vanilla ice cream, crushed waffle cones, chocolate sauce, caramel sauce, toasted pecans, whipped cream, and fresh mint.
  10. Assemble sundaes by starting with a scoop of ice cream, adding warm peach wedges, and topping with desired toppings. Garnish with mint and flaky sea salt if desired.

Notes

For a vegan version, substitute butter with coconut oil and honey with maple syrup or agave. Use dairy-free ice cream. The bourbon is optional; skip it or use extra vanilla extract. Peaches should be ripe but firm to hold their shape on the grill. Oil the grill grates well to prevent sticking. Grilled peaches can be stored in the fridge for up to 2 days and reheated gently.
