A quick and easy sheet pan dinner featuring tender, flaky salmon and crispy-edged broccoli, all coated in a rich garlic butter sauce. Perfect for busy weeknights, this meal comes together in about 25 minutes with minimal cleanup.

  • 4 salmon fillets (about 6 oz each)
  • 4 cups broccoli florets (about 1 large head)
  • 4 tablespoons unsalted butter, softened
  • 45 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line your sheet pan with parchment paper.
  3. Make the garlic butter: In a small bowl, combine the softened butter, minced garlic, lemon juice, Dijon mustard, dried oregano, and a pinch of salt and pepper. Mix until well combined. Set aside about 2 tablespoons of this mixture for later.
  4. Prep the broccoli: Wash and thoroughly dry the broccoli florets. Toss with 1 tablespoon of olive oil and a pinch of salt and pepper. Spread them out on one half of your sheet pan.
  5. Season the salmon: Pat the salmon fillets dry with a paper towel. Place them on the other half of the sheet pan, skin-side down if they have skin. Brush each fillet generously with the garlic butter mixture, reserving the 2 tablespoons you set aside.
  6. Roast everything together: Place the sheet pan in the preheated oven. Roast for 12-15 minutes, depending on the thickness of your salmon. The broccoli should be tender-crisp with lightly browned edges, and the salmon should flake easily with a fork.
  7. Add the final touch: Remove the pan from the oven. Drizzle the reserved garlic butter over the hot salmon and broccoli.
  8. Garnish and serve: Sprinkle with fresh parsley and red pepper flakes if using. Let the salmon rest for 2 minutes before serving.

Notes

For extra-crispy broccoli, give it a 5-minute head start in the oven before adding the salmon. If your salmon fillets vary in thickness, cut thicker ones in half or tuck thin ends under for even cooking. The garlic butter can be made up to 3 days in advance and stored in the refrigerator.
